Raw Chocolate Tarts Recipe

Hey GFs,

My new afternoon snack obsession is here! I haven’t had a cooking/baking urge in a while but I suddenly felt the urge to get creative in the kitchen the other day… and I think I’ve made my new favourite sweet treat!

These tarts have a chewy, nutty base and rich chocolate centre… and they are SO good!

Of course, this recipe is vegan, refined sugar free, gluten free and grain free!

Serves 9.

WHAT YOU’LL NEED:

BASE:

  • 1/2 cup almonds

  • 1/2 cup cashews

  • 1/2 cup shredded coconut

  • 1/3 cup coconut oil

  • 1 cup pitted medjool dates

FILLING:

  • 1/4 cup coconut oil

  • 1/3 cup rice malt syrup

  • 1/3 cup cacao

  • 1 tbsp cinnamon

HOW TO MAKE IT:

  1. Blend almonds, cashews, shredded coconut, coconut oil and pitted dates in a food processor or mixer.

  2. Spoon this mixture evenly into a muffin tray and flatten each with the back of a small spoon to make tart base.

  3. Put muffin tray in freezer to chill for 20 minutes.

  4. Mix all filling ingredients together and pour mixture evenly into your muffin tray cups.

  5. Freeze again for 1 hour and enjoy!

Ultimate tip: Store these in a container in your freezer and they can last up to a week!
