Did Someone Say... Paleo Choc Chip Cookies?!

I have never been so proud of a recipe guys! This creation came about because I was craving a delicious, gooey cookie (but without the added nasties that usually come with a store bought one!) So, after numerous tries (try 4...) I finally created the perfect healthy choc chip cookie recipe! Stick to the recipe and you should have a cookie that is crispy on the outside and soft on the inside... the way a cookie should be! I hope you love them just as much as I do!

PS: These bad boys are soy free, dairy free, grain free, gluten free and refined sugar-free (Damn that’s a lot of free's!!)

You will need:

  • 1 egg (room temp)

  • 1/4 cup smooth almond butter

  • 1 tbsp coconut oil (melted, room temp)

  • 2 - 3 tbsp coconut sugar (depending on how sweet you want it)

  • 2 tbsp pure maple syrup

  • 1 tsp pure vanilla extract

  • 1/2 cup almond flour

  • 2 tbsp coconut flour

  • 1/4 tsp baking soda

  • 1/4 cup dark chocolate chips OR break your fav refined sugar-free chocolate up and use that!


How to make it:

  1. Pre-heat the oven to 160’C.

  2. Mix the almond butter, coconut oil, coconut sugar, maple syrup, egg and vanilla together until smooth (I used a food processor but you can use a beater or mix well by hand).

  3. In a separate bowl, mix the almond flour, coconut flour, and baking soda.

  4. Combine the dry ingredients into your wet ingredients, until a dough is formed.

  5. Mix in some chocolate chips to your dough with a spoon.

  6. Wait 5 mins for the dough to be less sticky.

  7. Scoop dough balls evenly onto a tray lined with baking paper. It should make 8-10 cookies. Cookies will spread a bit so leave room between each one.

  8. Bake for about 10-14 mins in the preheated oven, or until cookies are set.
